For more than twenty years, James lived in professional kitchens.

He cooked hundreds of covers a night, burned through dozens of pans a year, and watched every nonstick surface he ever trusted degrade within months. No matter how expensive the pan, the problems were always the same:

After one long night of service ended with another ruined pan, James said out loud:

When Nathan approached him with a titanium prototype, James was skeptical. Another miracle pan, he thought. But he agreed to test it for a week. On the second day, a salmon fillet released from the surface without oil pretreatment. By the end of the week, he had retired three pans from his station.
